Chicken Pot Pie Recipe

So, I had an extra pie crust from making "Slutty Pie" the other day and with the snow and ice storm coming I was in the mood for comfort food.

Ingredients:

-1-1.5 chicken breasts cooked and cubed
-1 cup frozen peas and carrots
-1/2 of a small onion (small dice)
-1 can cream of chicken soup
-1 store bought pie crust
- Funyuns
-Olive oil spray

Herbs and spices to taste, but here are the ones I used: garlic powder, black pepper, parsley flakes, oregano, dill weed, sea salt.

Directions:

Preheat oven to 350 degrees

So, you just diced the chicken (large dice) and the onion (small dice) and toss with peas and carrots with the cream of chicken soup. Then, season to taste preference and bake at 350 degrees for approximately 30 minutes.

Once it looks a little bubbly, crush funyuns and sprinkle on top and spray with olive oil or butter and return to oven.

I put mine on LOW broil, but you have to stay right with it because it will burn quickly.

It isn't the homemade biscuit topping chicken pot pie I normally make, but it is super easy and SO VERY DELICIOUS!!!!

I love funyuns, but a cracker topping would also be amazing.

Like me..

I realized today that my children strive to be "like me" which, to be honest scared the holy sheets out of me!!!

Mainly because for most of their lives as formidable human beings I have considered them some of the coolest people I have ever known. Yeah, yeah...I know what you are thinking...mommy complex that whole "my kids are better than your kids thing", but that isn't it. Truthfully, not even close. They are just genuinely good people. I would like to take credit for that, but they were "good people" sooo early in life that I have often joked that I could have been a crack hoe and they would have still been the same people.

For many years I imposed my belief systems, thought processes and my actions as well as reactions to adversity onto these children. Today I realize that no matter who they become on their own or how great they are individually...I am still responsible for who they become.

It was something most would consider miniscule, especially since I truly believe they are already better than me at half my age or less. They are smarter, better looking, more intuitive, better decision makers and problem solvers.

What I never fully realized is that no matter how great they are or how much I feel that they outgrow me is that that they still look to me for direction. My eyes fill with tears and my heart swells as I reach deep within myself to find the passions that make my heart leap and my life become an example of what passion with a purpose looks like.

Greatness also needs great purpose.

Easy coffee cake


Easiest coffee cake ever:
Mix up the cake mix using directions on the box
Mix up the cookies using directions on the box
Spray 9x13 pan
Pour cake better in pan
Sprinkle cookie dough over cake
Bake until toothpick comes out clean in center.

FREAKING WOW THIS STUFF IS DELICIOUS!!!

Chicken Livas Dahling


So, I once had chicken livers and couldn't believe how good they were. They were not at all what I had grown up thinking chicken livers were. I grew up in the south so chicken livers were battered and deep fried (most of the time cooked to death and chewy and dry in the center).

These were sauteed with garlic and red wine-WOW!

So, for years I have been making different variations of the sauteed ones. Here is one of my favorite recipes. I certainly hope it changes your mind about these amazing, iron packed little protein packed morsels of tastiness from the heavens!

Ingredients:
1 small pack of fresh organic chicken livers (about 1/2 lb.)
3-4 pieces of bacon or pork belly
3 cloves fresh garlic
1 tbsp. butter

Seasonings (to taste-add anything you like or delete what you don't)
Garlic powder
Onion powder
Dill
Basil
Italian seasoning
Cumin
Paprika

Rinse livers thoroughly and cut any large pieces into smaller pieces to make them all close to a uniform size, pat dry and lie flat on paper towels to absorb any excess moisture


Cook pork on medium heat until crisp and fat has rendered


Season livers with desired seasonings (I like a few herbs and salt, pepper and garlic and onion powder with just a little cumin)
Dust lightly with flour or cornstarch


Remove pork from pan and add butter, once butter is melted add chicken livers in one layer trying not to crowd the pan. 


Cook until bottom is golden brown and crispy, flip and continue cooking (if they begin to pop I put a lid on the pan and check often to ventilate and ale sure they are cooking evenly)
Once browned on both sides, remove from pan and let rest for about 5 minutes or so.

Serve with pork belly and sauce of your choice.

VooDoo- lala cream












So, my best friends tease me about being a witch doctor and making voodoo potions because I make a lot of my skin care items and am enthralled by naturopathic and home healing remedies. Yes, I am a hippie at heart!

 So, here is the recipe for my voodoolala cream.



Organic coconut oil
Tea tree oil
Lavender essential oil
Peppermint essential oil

 So, the strength is something that you will have to play around with to find what is best for you. I like it pretty strong because it doesn't irritate my eyes or skin and I adore the smell (smells like a fab spa). My kids like it weaker and my friend's husband can't stand when he puts it on and goes to bed because he thinks the smell is very strong. The recipe I suggest starting with and adjusting from there is to start with 2 ounces of coconut oil, melt in the microwave (on power level 4 for about 30 seconds should be good, but microwaves vary) or sit in an area above 76 degrees until it is liquid. Add 3 drops of each essential oil. Stir with a toothpick or shake if in a sealed container and refrigerate until it becomes a solid again.

 Voila! You have made a cream that is great for the following things we know of thus far:
bug bites
headaches
bee stings
eczema
acne
dry skin (be careful not to use too much tea tree if making for dry skin as it is a drying agent)
foot fungus and odor
cuticle cream
face cream
eye make-up remover (if mixed weakly as not to irritate the eyes or just use plain coconut oil)
scalp treatment

Christmas Spirits


This year we have been seeing so many things about how homemade and handmade gifts are so chic. Also, it seems as if the people we give gifts to pretty much have whatever they want that they could go into a store and buy. Wow, we sound very blessed!!!

Anyway, what can you give everyone on the list that is the right size and is fun? Apple Pie Moonshine and Christmas Wine!

I found a few recipes for each on Pintwrest and YouTube, but like everything else...wanted to put my own spin on it. Most of the Apple Pie Moonshine recipes called for cider, but sometimes cider is cloudy and has too much allspice and nutmeg in it for my taste. So, just in case you were wondering why on earth I was using instant cider packs instead of cider-it tastes so great and is clear.

RECIPE
Simmer the following for 20 mins adding the sugars and cider packs once it is hot enough to dissolve sugars and cider mix
64 oz Apple Juice
64 oz water
2 caps vanilla syrup
7 cinnamon sticks
1 c. Sugar
1 c. Brown sugar
3 Alpine instant cider packs

Then cool completely and add the following:
1 bottle Everclear
3 Trial size bottles of Fireball
3/4 c. Vanilla Vodka

It's a Bling Thing (Nail Polish tutorial)

For the past 2 weeks, EVERYWHERE I go I have gotten compliments on my nails. Followed by, "Was it very expensive?". The answer to the question is emphatically "NO".

This nail polish seems to look much like the gel nail application that is so very popular and somewhat expensive. It is just polish, but has worn just as well as when I have had gel polish on my nails. This picture shows what they look like after 2 weeks of wear.

Step 1: Make sure your nails are properly trimmed and shaped (or just take this polish to your manicurist).

Step 2: Base coat nails

Step 3: Polish nails with 2-3 coats of KLEANCOLOR: Winter Wonderland polish.



Step 4: Polish nails with 2-3 coats of KLEANCOLOR: Chunky Silver polish



Step 5: Apply a super shiny top coat and allow to dry thoroughly!
(If you have time and you can get your manicurist to do so~try to dry as much as possible between coats to avoid that squishyness that applying too much wet polish causes)

Voila! Long wearing super blingy, fabulous nail polish!

So, I have this amazing friend who has a big test coming up for a very prestigious certification for her work and she has been studying her little booty off. I thought she could use a pick me up, and this is where my insane imagination took me...


This is the inside of the box. I picked up a few items that seemed lucky to me and then put a little spin on each one. The labels here are just Avery 5260 labels. You can download free avery software and templates at avery.com


This is a "Lucky Puffy". It is actually a rabbit fur brooch. I absolutely LOVE these things, you can literally put them on anything! I held this one in my hand and said a prayer for my friend so that every time she rubs it for luck, it will release my prayer and protect and uplift her.


This cute little tiara/crown hair comb (sorry the pic is not better) has been dubbed "The Crown of Wisdom" to hold in all of the knowledge that she acquires while studying.


What says Good Luck more than a horseshoe? So, naturally I had to put in a horseshoe, but no self respecting girly girl wants a rusty ol' horseshoe in her lucky box. This is a rhinestone horseshoe necklace that is sure to catch any good fortune passing by.


All wrapped up with a label and a bow makes this lucky gift good to go!

This one is mine. I wear it mostly all of the time. Mainly because it is also a fabulous hair comb that keeps the hair out of my eyes, but also because it is so nice to pass by a mirror and get a glimpse of myself and realize that; "Oh yeah, I royally deserve all that life has to offer!".
